Perfect Chicken Breasts

  • 3 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1/2 cup chicken broth
  1. Preheat oven to 375°F.
  2. Rinse and pat dry chicken breasts.
  3. Rub with olive oil and season with salt and pepper.
  4. Heat cast iron skillet over medium-high heat.
  5. Sear chicken 4–5 minutes per side.
  6. Remove skillet from heat.
  7. Add garlic, lemon juice, thyme, and rosemary.
  8. Pour chicken broth around chicken.
  9. Bake 20–25 minutes until internal temperature reaches 165°F.
  10. Let rest before serving.
