Oven-Baked Cast Iron Skillet Salmon

  • 1 lb skin-on Atlantic salmon fillet
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • Fresh herbs for garnish
  1. Preheat oven to 425°F.
  2. Pat salmon dry and season with salt and pepper.
  3. Heat 1 tablespoon olive oil in cast iron skillet over medium-high heat.
  4. Place salmon skin-side down and cook 2–3 minutes.
  5. Flip salmon skin-side up.
  6. Drizzle remaining oil over salmon and add garlic.
  7. Arrange lemon slices around salmon.
  8. Transfer skillet to oven and bake 8–12 minutes until salmon flakes easily.
  9. Let rest a few minutes and garnish with herbs.
