Cornbread for Two

  • 1/2 cup plain flour
  • 1/2 cup yellow cornmeal
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/8 cup cooking oil
  1. Preheat oven to 425°F.
  2. Add enough oil to coat the bottom of a small iron skillet.
  3. Place skillet in oven while mixing batter.
  4. Sift together flour, cornmeal, sugar, baking powder, and salt.
  5. Add egg, milk, and oil.
  6. Stir until blended.
  7. Pour batter into hot skillet.
  8. Bake for 17 minutes.
