Cornbread for Two
Ingredients
- 1/2 cup plain flour
- 1/2 cup yellow cornmeal
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1/8 cup cooking oil
Instructions
- Preheat oven to 425°F.
- Add enough oil to coat the bottom of a small iron skillet.
- Place skillet in oven while mixing batter.
- Sift together flour, cornmeal, sugar, baking powder, and salt.
- Add egg, milk, and oil.
- Stir until blended.
- Pour batter into hot skillet.
- Bake for 17 minutes.
