Instructions

  1. Preheat oven to 425°F.
  2. Mix olive oil, garlic, herbs, paprika, salt, pepper, red pepper flakes, lemon zest, and lemon juice.
  3. Pat chicken dry and coat with marinade.
  4. Marinate 30 minutes to 2 hours.
  5. Arrange chicken skin-side up on baking sheet.
  6. Add potatoes around chicken if using.
  7. Roast 35–45 minutes until chicken reaches 165°F.
  8. Let rest 5 minutes before serving.
